It may be some time before an allergy presents symptoms.
I ate tomatoes, potatoes, bananas for years without
noticeable problems. Gradually that changed.

I am not overweight either.
BMI less that 15.

One of my relatives and I share being allergic to latex.
I wouldn't have become aware of my own allergy as
'soon' as I did if I hadn't known of her situation.

I say
'soon' because I didn't associate the sensations I was
having to what I was eating. I thought maybe I had
stomach cancer. It was latex allergy. Bananas are in
the latex family.

I would guess that you lose weight rapidly when you
don't "eat a lot of pasta, potatoes, nut butter..." because
that's your usual diet. Meaning if you're not eating that,
what other food do you eat instead?

People have told me that it would be unthinkable for them
to exist without eating tomatoes or potatoes. I am allergic
to both.

The problems with various foods weren't noticeable when I
was a child, except for caffeine. That started when I was 12.
Hives. But for months my mother thought it was bug bites
that just happened to appear when I visited my aunt's house.
She always made me a cup of tea. And when I'd go home
I had itchy red bumps.
 
@tree thanks for the example from your life. I did not have that possibility on my radar - now I do! Will definitely bear that in mind and test how I feel if I cut certain foods from my diet for a while.

As far as what I eat goes: we make an effort to "eat the rainbow" with a plant based, largely unprocessed diet (except pasta and flour for bread).
