It's an adaptive thing, I force myself to do it at work and I can blend in about 95% of the time. I don't copy word for word what people say, but I can absorb personalities and it shows over time.
I can mimic accents as well, though I would consider that a bit disrespectful amongst people whom I'm not familiar with.
