Food nightmares... and Food fixes

I'm not sure how many ASD type people have digestive problems. I do, and they are very real, and steal much of my LIFE from me. I also spend a massive amount of time researching on this topic.

We have all heard "Gluten Free" and how gluten is a protein found in wheat that needs a special enzyme to be digested, that some of us cant produce (me for 1).

Yes, I know that this "GF" thing is becoming a "fad" and at some points nearly fraudulent, but that doesn't fix my angry gut. So I'm not going to argue with the fad stuff... I'm trying to be real with who I am and what I need to survive and THRIVE.

This morning I was reading a story by Dr. Gunther (creator of heart stent and many other cardiac medical inventions)... He mentioned Sour Dough Bread. I don't think I have ever eaten SDB?

Anyway in the fermenting process of regular flour the gluten is broken down! So it is not quote "gluten free" but the gluten has been sort of pre-digested in the process of making the dough.

I went on and found more stories that basically made the same claims and even one that gets really involved on how the process takes place... Like this one.

Is Sourdough Gluten-Free? (Gluten Sensitivity & Sourdough)

I'm a pretty health conscious guy. I like to try my best to take care of my body. I'm not some body building freak or nothing like that... I just want to give my body the best FUEL possible for the best ENERGY and least problems. So I dig into this stuff regularly.

So back to the "fad" thing... Just because Sour Dough cannot ever be labeled GF...
Is it bad for me? I have a world renowned heart surgeon who states it actually GOOD for any person to consume this type of bread because it is low glycemic, it digests well, and it helps regulate blood pressure... Who knew?

I'm going to try it and see. I never really get to have anything resembling bread. I do get waffles, pancakes, corn bread, and I have basically engineered my own pizza crust with eggs fine ground corn mill and Bob's Red Mill GF flour mix, but bread or cake - not so much.

I may hate Sour Dough Bread... I have no idea yet, but I am always open to try it before I call foul on it because its not GF.

Anyway... Please post your thoughts on this and or foods that HELP you, or make your day a living hell... : )

I like trying to find patterns in stuff and this is so BIG PICTURE I mostly cant grasp many pieces that fit, but I will always try.

just finished a loaf of white sourdough bread( it says it has 1% wheat and oat sour dough ) couldn't tell the difference ,brown might be different.
but my digestive tract is permanently in a state of flux !either because I've eaten too much of one thing or because of IBS !and I still appear to have a strange sense of taste !after having an infection 11 years ago .

All to do with GMO, which I believe is very big problem in America?

Here, in France, they refuse to use GMO ( at least, that is what I am lead to believe).

A spiritual sister related a very interesting occurance, that happened in Australia. Bread was banned, because it was making every one sick, but a spiritual brother was confused by this, because he reasoned that in europe, bread is plentiful and so, what is going on? He delved deep and his findings were astonishing.

Excuse my laymen terms here: When wheat is grown, a bacteria developes that sits on top of the ear of grains. When harvest time arrives, this bacteria drops off. However, due to mass production and money grabbers, the wheat was being harvested before its time and voila the bacteria still attached and this is what was or is causing all the illnesses.

We NEED food for fuel, as you so rightly say, but it is what big businesses are doing with food that is causing our bodies to get sick.

GMO causes an artificial eostrogen to grow inside the body, but it causes bad cells to appear ie cancer.

The only way to avoid this, is to learn to cultivate wheat yourself.

Also, GMO wheat is engineered to be resistant to the herbicide RoundUp. As a result, GMO wheat is soaked with it right up to harvest. The problems might come from constantly ingesting what is, after all, Agent Orange.

Another cardiac specialist, Dr. William Davis, wrote a book, Wheatbelly, about how grains aren't that good for anyone.

I have followed his advice for many years and have had nothing but good results! My arthritis is only a whisper, my digestion is stellar, and my chronic inflammation is helped by doing as he suggests.

you can get gluten-free sourdough bread which strangely has yeast in it
non-gluten free sourdough bread doesn't have yeast in it I couldn't have the gluten-free as it has egg in it .
The gluten-free sourdough bread I looked at had carob and apple in it ,it's a white bread .
there was only one that was gluten-free ,the rest had gluten in them .

@Suzanne Are you referring to ergot poisoning? Because that happened in Europe as well, due to a fungus growing on rye grains. It most famously happened in the middle ages, but still happens occasionally in developing countries. I haven't heard of a recent outbreak in Australia though.

Concerning digestive problems, my stomach hates lactose in any milk and soya dairy with a much greater passion than gluten in grains. As such, I'm not sure if my opinion will be of any help but sourdough bread didn't make much difference for me. The taste is very similar to some nice fresh bread, although definitely better than these packed toasts or whatever in most markets around. No digestive problems.

Have no idea, because it was related to me. I guess I should do my own research.

Not sure about gluten but have come across some info stating that certain fermented foods (when fermented properly) can restore healthy gut flora. Things like Kimchi, sauerkraut, Kombucha, Miso, Pickles, Kefir.

Have yet to implement this into the diet but it is on the long list of things to try

Yes or use a really really good probiotic that has about 50 billion bacteria to get your gut healthy again. You might have to eat a lot of the above to get the same amount of healthy gut bacteria.

I tried the decent probiotics, the expensive probiotics, and real fermented sauerkraut (it shouldn’t have vinegar in it that is cheating) and nothing worked like kombucha!

Ooops, my bad, should have said 50 billion not 50 million, corrected it. This works very well for me and I have ulcerative colitis.

Mind you, vinegar itself is a fine digestive aid. You can put some in water and drink it.

I have severe food troubles. I am seeing my gastro on Wed to see if she will place an NG tube. If not, I am considering placing my own. It is too much of a torment. Trouble is that what goes into the tube is food based.

It is genetic, not just the gut. Chrom 6

Thank you all of you for what you posted so far...

I used to not have much trouble getting this gut thing back in balance... Yes the internet is wonderful but its full of hacks, click bait, and just pure lies at times...

I have learned a new way to sort of get my information... Its outrageously boring and I have to look up lots of words but medical journals/studies I sort of trust that, but even that changes as we learn more about the human body.

I have been outside all day, enjoying a wonderful day with NO WIND (Thank you GOD)... But I'm gonna dig back into what I was reading this morning now.

It was based on a whole different level of eating foods with high amounts Polyphenols and eating less foods with Lectins (which is hard, but doable), no soy, no gluten, nuts in small amounts, lots of fish, a little chicken, a little beef, and good probiotics (I can do this)... No pre-packed foods, no extra sugars, no GMO and so on.

These studies had some seriously great results in tests, and some of the patients were too unhealthy to have surgery, and later they didn't need surgery. I'm still digging to see what else it states...

I'm not looking for a miracle, a hack, or a even a quick fix. I just know that 150 years ago humans were not dealing with this type of out of balance gut, which throws the whole body out of balance.

I also know that IF they were to suddenly fix this one issue, it would cripple the medical and pharma industries... So its kind of like wading through a pit of digital snakes, and witch doctors who are not really happy to hear any changes to the established narritive.

My biggest deal now I think (like I stated in another post) is I have had so many probably unnecessary antibiotics in my life, but supposedly that doesn't matter. This is all about getting a normal flourishing balance back into our guts and in that we think clearer, we heal leaky gut, raise our metabolism, allow the thyroid to work better which increases our natural energy, clear up any skin issues (which I don't really have) stop bloating and cramps, etc... and thats about all I got for now.

I did notice some cheap shots, and some really negative remarks, within some of this pile of stuff... From people who are opposing this type of simple daily regimen... Some are calling calling it "hack medicine" among other stuff. That is actually ODD and makes me even more curious to dig further into it... I call these type of people "gate keepers for the status quo." Well the status quo has never worked for me anyway. So onward I go into the fog... : )

I have heard a lot of fermented foods are good to add. I agree with you. We have poisoned the food supply. Even "organics" are poisoned. I got very sick from arsenic in rice because it was all I could eat! THey put arsenic in chicken food so they won't get bird flu and the organic co I bought rice from puts it on the fields. And it is still called organic! Look up all the things allowed in organic fare.

Same with organic corn. Because it polinates, you cannot be SURE it's organic. Same with soy and canola. I can't eat any of that.

Then you have what was already mentioned, the GMOs. There are different GMOs, they are not all the same. My gastro said he is sure the MASSIVE INCREASE in his practice from GMOs

This on top of all the chemicals. My chrom issues is not just out of the blue. Geneticist said envirmonmnet big time.

I feel so poisoned. Where I live now, it's a toxic mess.

I've heard that and even gave it a try. My friends recommended Bragg's vinegar with the mother. I can't say that it worked for me, but then I have a hiatal hernia that causes me all sorts of problems. My doctor said the surgery is more dangerous to fix it than living with it. I don't care about the danger, but living with the constant complications is becoming wearisome.
what does it do to you? Can you go to an alternative practicitioner? Accupuncture?

The diet you posted sounds really good (high polyphenols, low lectins, no soy, no gluten etc.). If you combined that with a really powerful probiotic (which you need because of the antibiotics) I'll bet you could get your gut under control pretty fast. Might need to cut out wheat products also. Hope you succeed!
