Baby Steps

I finally started a plan with my dietitian last Thursday and so far I've been following it pretty well. Though I discovered that I can no longer eat PB&J because it goes over my limit of 45mg carbohydrates per meal. Even if it's on whole wheat bread. Right now I'm stuck using the microwave for all my meals except breakfast, where I have to scrambled eggs in the morning with mushrooms. Losing weight is my biggest priority so I don't worsen my diabetes or cholesterol but it's still very overwhelming. I genuinely hope it gets easier soon.

Honestly I didn't think of eating it that way. I'd love to try that tomorrow!
 
I'm constantly thinking about my overweight and of course want to lose a lot. I don't think I could go much lower than 200 carbs per day though, not without adding a lot of fat, which is also not good for me. I don't digest fat very well.

PB&J is a lot lower in carbs if you just skip most of the bread. It might be good with milk, if you drink milk. Almond butter is tasty too. Almonds are said to prevent certain cancers and to be a little easier on digestion (kidneys).

I wonder if there is low carb jelly/jam. As far as fruits (jam/jelly) go, lemon is lower in carbs. I know there are some good lemon "curds" out there, but not sure how many carb sugars are added. Also, strawberry has a lot less carbs than other fruits. I tend to get addicted to mushrooms when I eat them, but I've heard too many mushrooms at once can be hazardous - I wonder if your dietician would let you alternate with onions/garlic on some days.
