What was the last thing you cooked?

Potato soup for lunch.

Nowhere near as good as what my mother used to make, but with each attempt it's getting better. Though I'm not apt to make it hours ahead of time and let it simmer so long as Mom used to do.

Greek chicken shish kabobs on the grill. Served with fresh butterbeans (baby lima beans), fresh steamed broccoli, and basmati rice cooked in chicken stock.

Had a frozen spaghetti dinner last night. Out of the box it's pretty dull as most frozen foods are.

However I cook a quarter-pound of ground beef prior to putting the spaghetti dinner in the oven. At the halfway mark (20 minutes) in the oven, I take it out and add the ground beef chopped up, some parsley and five scoops of thick vegetable style spaghetti sauce.

When it's ready, it gets doused with parmesan cheese. THEN it actually makes a decent dinner.

I found most frozen meals to be incredibly expensive and not very nice, but in looking for things to cook in my air fryer I stumbled across a little gem - Coles Homebrand Mini Beef Spring Rolls.

As far as traditional spring rolls go they're rubbish, but as simple meaty snacks they're pretty good and extremely cheap, Au$2.50 compared to around Au$8 for normal frozen meals. A box of these makes a quick easy meal for me, beef and cabbage wrapped in rice pastry, 12 minutes straight out of the freezer, what more could you want?

Homemade (scratch) Hearty Mac and Cheese

(ingredients: olive oil, tallow, onion, pork roast, peas, mashed white beans, colby jack, heavy cream, salt, bbq seasoning, flour, macaroni noodles)

And broiled sage bread

(ingredients: bread, olive oil, sage, salt)

Really really really really gooood.

Yeshuasdaughter's Mmmm Good Tex Mex style Pork Shoulder

4 to 5 pound pork shoulder (cubed, deboned, and fat trimmed away)
3 T bacon grease with bacon broth drippings
3 T Jacobsen's house seasoning (BBQ seasoning)
1 T Cayenne
1 T Salt
hearty dash Red Boat Taiwanese Fish Sauce (or soy sauce)
1 tsp black strap molasses
hearty squirt of yellow mustard

In a big soup pot melt the bacon grease

Dump the cubed pork shoulder into the bacon grease

Dump all them seasonings on top

Stir real good to coat the meat

Let the meat brown real nice

Stir occasionally until it's done

The meat will release a couple cups of juices as it cooks. When the meat is done, add 1/3 cup of white flour to the pot and stir like crazy to make the juices into a spicy, enchilada style gravy sauce.

Tonight we're topping making fancy ramen with peas, corn, some of the spicy pork, and a fried egg. I like a little fish sauce and some Tapatio on top of my ramen.

I'll store most of it in the fridge for other nights. This pork is heavenly on rice. that's how we'll have it tomorrow most likely.

One of my routine and simple homemade tostadas.

Though quite often they're hotter than they may look!

A modest, all-veggie lunch. Though I never skimp on all the cheese(s) underneath. ;)

Getting set up to make Cherry Jam. I use Michigan tart Cherries, a mixture of Baloton and Montmorency. I have six pounds to work with. Jars and lids are sterilized. While the high sugar content is safe for hot water canning, I always pressure can using an overkill cycle.
