Something about cheese on top of macaroni sounds a little odd. Something about the texture and consistency of macaroni makes me think it doesn't work together with cheese.But I know it's very popular so I should try it.

My mother was born and raised in Louisiana. She made good mac & cheese, but
I don't know anything about it that made it 'southern.'

I think of southern mac & cheese as first making a roux with butter and flour, add half and half and a can of evaporated milk for the liquid, some onion powder and garlic powder, cayenne and black pepper, grated cheeses (sharp cheddar, mozzarella and pepper jack), al dente macaroni pasta, all mixed together in a casserole dish, topped with breadcrumbs drizzled with melted butter, baked in the oven till bubbling hot.
