What was the last thing you cooked?

I made pickled Yucatecan style red onions for the tacos I'm going to serve my brother and his wife for lunch today. They're visiting from out of state.

1/4 cup orange juice
1/4 cup grapefruit juice
1/4 cup lime juice
1/4 cup white distilled vinegar
1 red onion, thinly sliced
1 or 2 charred whole jalapenos or banana peppers (leave the blackened skin on)
2-3 bay leaves
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp ground allspice

Put everything in a sealable jar such as a Mason jar, shake it up to mix everything, let it sit at room temperature for at least 2 hours, turning the jar over occasionally to distribute the liquid. It will keep in the fridge for at least a month. It turns a beautiful hot pink color.
 
I juiced about ten oranges and two lemons and put the concentrate in the fridge. I'll make citrus punch in the morning

I put all the citrus peels in to a pot and added a Tbs of cinnamon and filled the pot 3/4 of the way with water. I put the pot in the fridge just for now.

In the morning, I'll put that on the stove to heat, humidify, and cleanse the air, and to make it smell holly jolly in here.

I also decocted a potent syrup for dry cough.

I have a little crockpot that I put spices (cinnamon, cloves, Chinese 5 spice, star anise, ginger root, bay leaf, citrus peels, etc.) and water in, to gently simmer throughout the day. It smells like Christmas and hydrates the dry air in the house. I just add more water when it starts getting low and put a sticky note on my bedside lamp to remind me to turn it off when I go to bed.

Salmon. Wish I could afford some scallops. No fish around here in the stores. And can't find decent Chinese food or pizza in new place I'm in. Pizza is thin as paper.
 
Same thing I have every day for breakfast: steel cut oatmeal with walnuts, raisins and brown sugar.
 
Last night I made an amazing, restaurant-quality spaghetti sauce. It simmered for wellllll over an hour, maybe more than two. Dinner was near midnight. The seasonings were lovingly rounded out. It was true comfort food at its finest. I knew I needed to make emotional support spaghetti for morale, after the day we had.

The night before that I baked an apple pear pie. I added a bit of extra ginger and the tiniest, faintest kiss of black pepper for an extra appley zing. It turned out really really good.

This evening, I made apricot mango preserves. I never use pectin. I don't know how. I just cooked the fruit and juice down with sugar til it fell off the spoon in just the right way.

Right after that I also mixed together a down home style breading for our oven fried chicken thighs.

And earlier, I mixed essiac pulp, blackstrap molasses, colloidal silver, and water to fertillize and pep up our houseplants, since they're seeming kinda limp n brown overwinter.

So, currently my daughter is breading the chicken, and I'm waiting for the jam to cool a little so I can can it.

Chappy Chanukkah!

Last night my daughter roasted two chickens. And today I'm making the white meat from those chickens into a big pot of Matzo ball soup.

Matzo Ball Soup:

For the soup:

Bone Broth
Water
Chicken
Carrots
Onions
Cabbage
Seasonings

For the Matzo Balls:

Crushed Matzo Crackers
Eggs
Olive Oil
Seasonings

Maybe garlic bread on the side? No promises. We're busy dusting our miniature Winter Wonderland village display. And putting up the tree too.
 
Homemade buckwheat gingersnaps

I had this ultra boring and bland gluten free, vegan sugar cookie mix. The ingredients list stated it contained only buckwheat flour, sugar, baking soda, and salt. One was supposed to add oil and water to it. and make cookies out of that. Ewwww.

So what I did was I dumped the mix into a bowl, added 3 eggs, a stick of melted butter, some pumpkin pie spice, nutmeg, and cinnamon, a little extra baking soda, and some blackstrap molasses. Then we worked in a little white flour at a time until it had the consistency of cookie dough.

It came out really really good. They're ultra-soft gingerbread cookies. Yum yum. So good! Very Christmassy :)

I also made carnitas for tacos. But the taco shells were broken, so they became nachos. And no one ever cried.

I cooked some bacon in the oven this morning. 375 degrees F, on a parchment paper lined sheet pan, for about 25 minutes. We rarely eat bacon but it's cold here this morning and I wanted some extra fat to keep me going today. I have a long list of stuff to get done.
 
My latest food obsession has been making meatloaf. Every Sunday for the last two months I have been working and reworking my recipe for meatloaf trying to come up with the perfect loaf. At the moment I've had the best results when I use half lean ground beef with half lean ground turkey using instant stuffing mix as the binding agent along with a few other spices.
