These are called cookies, but are closer to candy, in my opinion. They are pretty good and very easy to make. They do not require an oven, so are not so bad to cook when it is hot weather. They have oats in them, but it comes out tasting like it is coconut instead of oats.
No-Bake Chocolate Cookies
3 c one-minute oats (i never eat these so use rolled oats instead)
Pinch of salt (I leave this out since Americans get over 30 times as much salt as we need.)
1 tsp. vanilla
2 c sugar
1/2 c milk
1/2 c butter or 1 stick
3 tablespoons cocoa or more
2 tablespoons peanut butter
Cook sugar, milk, butter, cocoa, and peanut butter for 3 minutes in a saucepan at medium heat. Stir it up well while it is cooking. I just keep stirring it since it can burn fast. Take off stove and add vanilla nd a pinch of salt. Stir in oats. Drop by spoonful on waxed paper. Let cool.
I do not use waxed paper since it is bad for the environment. It is not hard to clean off a cookie sheet, which I use instead. I have also used dinner plates.
You can freeze these for later. They are nice to eat frozen.
