What are the specific challenges that arise when trying to use a laptop in an Uber?
 
I don't have a clear picture of what you need, but you might try making some legs for the laptop that fit onto your legs, and fold up or down. You could do the prototypes with cardboard and duct tape, and refine them as much as you want. You might even want to start by finding a corrugated cardboard box with a top about the size of your laptop, and hack away at the bottom to fit. The whole thing can be folded flat.
