My mother's special thing for Thanksgiving was candied sweet potatoes.
Brown sugar. Butter. Cinnamon. (NO marshmallows.)

I was amazed later to find out how great just plain baked sweet potatoes were.
Baked in the skin, the way people bake 'regular'/'Irish'/plain white potatoes.

Did you boil them or what?

Someone summoned me at the mention of sweet potatoes. My Southern heritage takes notice. They're really delicious and if you want to split one fresh out of the oven & put some butter in it, maybe a little bit of brown sugar (cinnamon if you like), and eat it in the jacket--That saves all the mashing of it.

I love to microwave one for 5 mins. Cut up into little cubes, cut up some onion onion, add jalapeño salt and fry into a hash. I do sneak in some soy sauce. Then l fry a egg up, put it on top. Reminds me of corn beef hash my mom would make for dinner. Then top with ketchup and eat for breakfast. The traditional hash is with cubed potatoes some type of chopped meat.

@Gerald Wilgus I hope you're feeling better. It's totally understandable that you don't want to do Thanksgiving this year. You need the time to heal.
