No vinegar even, but I did improve the flavor profile by throwing in fresh tomatoes and fresh olives.

I've never liked vinegar on salads. I prefer them with a bit of water after washing the lettuce, and some olive oil if I'm feeling particularly fancy. I do add salt and pepper.

A few strands of sauerkraut can perk things up, too.

@tree are you really sure you mean "sauerkraut" and not cole slaw salad? maybe red cabbage?

I like greek "Bauernsalat", with olives, peperoni, feta cheese, tomatos, cucumber, onion the most. just with vinegar and olive oil, no water, salad or herbage.
