Without playing diagnoses roulette I want to get to the bottom of why I am so confused about anything. Whatever this is, it's getting worse.

("Like" is just to acknowledge here, not because I "like" your situation!)

As someone who has burnt out several times in a lifetime, I can safely say that you have enough stress factors in your life at the moment for burnout to explain how you're feeling. The housing situation, trying to sort various other big things out, not getting as much restful sleep as ideal, no cooking facilities at your place...

...etc etc etc. Human physiology isn't designed for that much stress going on and on more than a short time. Prolonged activation of the fight/flight survival mode leads to burnout.

Stress management, sleep management, focusing on good nutrition, healthy outdoors pursuits are some things I've personally always had to focus on extra well when getting into stress clusters!
